Asset Category Accounts can be changed only before a category is used.
Once an asset is assigned to an Asset Category, the accounts can not be changed anymore.
Standard Solution is:
1. Create a new category, with accounts wanted.
2. Reclassify the existing assets with problem category to the new category.
If there is a high volume of assets, use the Mass Reclassification option.
